Hi Friends! Today I’m going to share a veg recipe.
Simple bhindi masala fry to serve as a side in an Indian meal. This bhindi recipe is my absolute favourite. It’s a simple recipe and tastes so good with any type of roti and rice.
Bhindi is also known as okra and ladies finger. Is a delicious vegetable. It’s high in fibre and the slimy stuff in it is good for joints and knees lubricant. Many people dislike this vegetable because of its slimy, sticky gravies.
How to make bhindi less slimy
1. wash and pat dry the okra before chopping.
2. Fry the okra in little oil before adding it to the gravy or masala.
The recipe I have shared here is one of the delicious ways to prepare bhindi. To make bhindi masala you will need to do some preparation work for the lady finger, wash them and use a clean kitchen napkin to wipe them dry completely. Then cut the tip and crown, and cut the lady finger into 1 to 2-inch pieces. Cut each piece into strips (julienne cutting). I have added some spices to marinate the bhindi and fried them till crispy. Remove them on a plate once done. Then cook all the other ingredients to make a tasteful masala. Finally, add fried bhindi into the masala and toss it well.

This tasty Indian dish is surely going to tickle your palate. Bhindi fry masala is ready to be attacked with roti or rice.

Ingredients
  

  • 250 g - Ladies Finger / bhindi
  • 2 - Onions Sliced
  • 1 - Tomato Chopped
  • 1 tsp - Garlic Chopped
  • 1 sprig - Curry Leaves
  • 2 - Green Chillies Slit
  • 1/2 tsp - Ginger Garlic Paste
  • 1/4 tsp - Turmeric Powder
  • 1 tsp - Chilli Powder
  • 1/4 tsp - Kashmiri Chilli Powder optional
  • 1/4 tsp - Cumin Powder
  • 1/4 tsp - Fennel Seed
  • 1/2 tsp - Garam Masala
  • 1 tbls - Tomato Ketchup
  • 1 tbls - Coriander Leaves Chopped
  • Salt
  • Oil
  • For marinade -
  • 1/4 tsp - Turmeric Powder
  • 1/2 tsp - Salt
  • 1/2 tsp - Chilli Powder
  • 1 /4 tsp - Ginger Garlic Paste
  • 1/4 tsp - Cumin Powder
  • 1/4 tsp - Lemon Juice
  • 1 tbls - Corn Flour
  • 2 tbls - Rice Flour
  • Oil for deep frying

Instructions
 

  • Wash and wipe the bhindi well. Cut into julienne.
  • Marinate with spice powder, lemon juice, salt and ginger garlic paste. Rest for 5 minutes.
  • Add corn flour and rice flour. Gently mix with your hand. Give a dry coating for the bhindi.
  • Fry them in hot oil. Fry them till crispy. Remove them on a plate once done.
  • Heat pan with 1 tbls oil, add fennel seeds. Let it crackle. Add garlic, curry leaves and onions. Saute for 3 minutes.
  • Add ginger and garlic paste. Saute till the raw smell goes away. Add tomato and all the spice powders. Saute for 2 seconds and pour 1/2 cup water immediately. Let it to boil for 3 minutes.
  • When its done, add 1 tbls tomato Ketchup. Mix it well. Now its time to add the crispy fried bhindi. Toss it well. At last sprinkle some fresh Coriander leaves.
  • Serve with roti or rice.

Notes

You can add fried potatoes to make Aloo bhindi masala.
