Creamy Potato Soup
An easy and delicious creamy potato soup recipe that can be made in just one pot! Loaded with fried onions and creamy potato goodness, this is favourite comfort food in my household

- 2 potatoes boiled and mashed
- 2 tablespoons chopped garlic
- 2 tablespoons chopped onion
- 1 tablespoons butter
- Salt to salt
- 100 ml milk
- 2 tablespoons cream
- Golden-fried onions for garnishing
For vegetable stock
- 1/2 cup Coriander leaves
- 1/2 cup mint leaves
- 5 cloves of garlic
- 1 bay leaf
- 1 small carrot
- 1/4 cup curry leaves
- 3 green chillies
- 2 cups of water
Boil the ingredients for vegetable stock. Boil for 15 minutes. Strain out the vegetables.
Heat a pan with butter and add garlic, fry till golden colour. Add onion and saute for 2 minutes.
Add mashed potato and mix it well.
Pour the vegetable stock and mix it well without lumps. Add milk and salt to taste.
Adjust the thickness. Let it boil.
At last, add cream and mix them.
Serve hot with fried onions.
